Carlos Melendez is the owner who’s knowledge and creative approach with authentic Mexican cuisine and decor date back to his childhood in Mexico City. His food is also influenced by his travels abroad and his history in the restaurant business, including Tapas in Philadelphia. While preserving authenticity for his old family recipes, Carlos embraces modern Mexican cuisine fusions and contemporary architecture trends which are sure to stir an adventurous spirit in patrons. Still, Mexican cuisine, as many of us know in the U.S. is available too: quesadillas, taquitos and enchiladas. Does the thought of Coyote’s Signature Margarita along with succulent ribs in a pineapple-barbecue sauce or grilled/crusted salmon temp you?
